Kang, widely recognized as a trailblazer in mixology, brings an impressive pedigree to Doberman. Having honed her craft at some of the country’s most prestigious bars, she most recently served as director of beverage development for Fontainebleau, where her influence helped Collins Bar earn a spot among Esquire’s “Best Bars of America”. Now, she’s set to redefine the cocktail scene in Las Vegas with a menu rooted in storytelling, drawing from global inspirations and her signature approach to balanced, nuanced flavors.
“Every menu I create follows a theme, providing a deeper layer of perception and storytelling,” said Kang. “With Doberman, I was drawn to the concept of old world meets new—modernizing classic cocktails while incorporating global flavors. I want guests to experience a passport to different cultures through each sip, embracing the complexities of Eastern European and Asian influences in a way that’s fresh, bold, and forward-thinking.”
The cocktail program at Doberman Drawing Room will be nothing short of avant-garde, with a meticulously curated selection pulled from a library of over 100 spirits. Staying true to Kang’s philosophy of balance, the menu incorporates health and wellness principles, offering drinks that transcend traditional boundaries. Among the signature cocktails that embody Kang’s approach:
- Big in Japan – A clarified milk punch that blends fruit, vegetables, and yogurt for a refreshing yet complex profile. Featuring gin, green plum, watermelon, and Japanese kefir, it’s a playful nod to cross-cultural success.
- Tom Kha Fizz – Inspired by Thailand’s Tom Kha soup, this cream-charged Ramos Fizz infuses gin, lime, tom yum spices, bird’s eye chili, cream, coconut, and egg whites, delivering a rich yet balanced sip.
- The Continental – A sophisticated reinvention of the New York Sour, combining rye, ancho chili, passion fruit, lemon, and red wine foam for a dynamic fusion of grain, fruit, and spice.
